About the speaker
Salvatore is one of Australia’s most dynamic personas in the world of specialty coffee, micro roasting, innovative dining and creating havoc in general.
Since taking over St ALi in 2006, Salvatore and his team have continued to push the envelope with innovative coffee environments.
Unique in an Australian department store, Sensory Lab in David Jones was launched in December 2009. It is a distinctive coffee concept where specialty coffee and individual taste-profiling is on offer from lab-coated assistants. Sensory Lab has featured in global design and trend forecasting forums including Future Laboratory, Global Design Report and Monocle.
In 2011, Salvatore licensed the St ALi and Sensory Lab concept to London, both opening to great applause. He is currently seeking additional sites for these cafes in the UK.
With St ALi North launched in December 2012, and Sensory Lab Bondi launched in December 2013, Salvatore and the St ALi Group continue to grow as a best-in-category, not only in Australia but internationally.
