1. Games use both bump and normal maps. Why? For lots of reason, but you will find normal maps appear to have modeled detail, with light reacting to details etc. but it's really a flat map. Where bump maps don't quite have the flexibility. Bump maps were the first generation of the now popular normal map.
2. Have a look through the wineglass modeling tutorials, and you'll experience first hand what the difference is.
Try doing a google search, you'll find lots of great resources explaining the differences between the maps and modeling methods.
